What We Do
In Southern Mexico the invasive "pez diablo" or armored catfish has decimated the freshwater fishing industry, now accounting for 70-80% of wild capture. Due to misinformation and stigma surrounding this "villain", fishermen throw it away but it's a great tasting and highly nutritious fish! We work with local communities to process and commercialize the fish - today we sell fillet to restaurants and corporate kitchens and will officially roll out our El Diablito jerky in Fall 2018.

Started in the summer of 2017, El Diablito jerky is the most sustainable jerky. Last summer, the Acarí team began experimenting with ways to preserve the invasive "devil fish" to craft a protein-packed snack for people on-the-go. After several months of experimenting with flavors in a household dehydrator, El Diablito was born. Because of the devil fish's mild flavor and firm texture, El Diablito jerky tastes and feels like beef jerky, but without the environmental impact.
We're processing this naughty lil devil into a tasty treat chock full of protein and omega-3's. As an invasive fish, every delicious bite of El Diablito helps to restore the natural ecosystem. No concerns of overfishing or fish farming here! Additionally, every batch is made by hand without nitrites or other chemical preservatives. El Diablito is the jerky you crave, without the guilt of traditional meat jerkies.
